Juicy king scallops wrapped in tasty, crispy Serrano ham - amazing
Wrap each individual scallop with a slice of ham. Secure the scallop and ham together with a cocktail stick.
Heat the olive oil in a non-stick frying pan over a medium heat and lightly fry the scallops for 2 minutes. Take the pan off the heat and leaving the scallops in the pan, rest for 1 minute. Return the pan to the heat and turn the scallops onto the other side for a further 2 minutes. Remove the scallops from the pan when the ham is crispy all the way round. Remove the cocktail sticks.
Serve the scallops with the lettuce and tomato, finished with the parmesan shavings.
