This perfect plaice dish will get your tastebuds tingling!
First of all make the pea puree. Put the peas into boiling water for a couple of minutes, then drain and blitz in a food processor or with a hand blender with the butter, mint, lemon and seasoning. Set aside.
Place the stock in a saucepan or sauté pan with a lid. Halve lengthways and carefully role up the plaice fillets and place in the pan. Cover and cook at a simmer for 5-8 minutes.
Fry the pancetta in a dry frying pan till crisp.
Serve the plaice on a bed of pea puree with the pancetta on top. Garnish with lemon and a drizzle of oil.
