1. Toast a bread of your choice – baguette, ciabatta or your daily loaf in the house – until golden brown.
2. Take a tin of mackerel and flake the fish onto the bread then place some sliced sun-dried tomatoes on top. For a baguette we recommend having at least two halves of sundried tomatoes from the jar but you can have as little or as much as you like. The sundried tomatoes normally come in oil and this will soak through the fish onto the bread which makes it all bind together into a tasty treat.
3. Next grate some cheese over the sundried tomatoes and toast them under the grill for a few minutes.
4. Once the cheese has fully melted, serve with a salad of your choice on the side.
NOTE: You can use any tinned fish - salmon, sardines or tuna it doesn’t matter, just whatever you have in your house.
