Certain nutrients have antioxidant action and help to protect cells from oxidative damage. These include vitamin E, riboflavin (vitamin B2), zinc, copper and selenium. Different varieties of fish contain many of these nutrients. For example, shellfish tend to provide vitamin E, zinc and copper; riboflavin is found in some shellfish as well as flounder, herring, mackerel and sardines; and most varieties of fish including white, oily and shellfish are rich in selenium.
