The method
- Heat the palm sugar gently in a pan adding only enough water to form a thick syrup.
- To the syrup add the lime leaves, shallots, lemongrass, ginger and coriander, simmer for a few minutes to infuse the flavours, add the tamarind and fish sauce, cook for another 2 min then strain and allow your Thai sauce to cool.
- Cook the langoustine quickly in a very hot pan with a little peanut oil.
To serve, prepare a salad of baby spinach, coriander, mint, sliced chilli, sliced shallot seasoned with lime juice. Scatter over the langoustine and spoon over the prepared Thai sauce.
