Fresh mackerel ranges in size from 200-800g and has a bullet shaped body with silvery-blue skin. Delicious baked, grilled or barbequed, mackerel works best with sharp sauces like gooseberry, rhubarb or citrus fruit or with Asian-inspired spices.
Tinned mackerel is a great store-cupboard staple and can jazz up salads, bulk out fishcakes or be turned into a deliciously moreish paté.
