Delicious, nutritious and easy to make, this fish dish is perfect for either lunch or dinner.
Cook the rice according to the pack instruction then drain.
While the rice is cooking, heat 1 tbsp of the oil from the tuna in a large saucepan. Add the onion and fry over a low heat for 3-4 minutes. Add the celery and carrots and fry gently until they begin to soften.
Mix the rice with the onion, celery and carrot mix, together with the tomatoes, sweetcorn or peas and the drained tuna. Season to taste with salt and pepper.
Gently stir in the pesto, adjust the seasoning to taste and serve, garnished with fresh herbs, if desired. Delicious warm or cold.
