- Cook the lobster in boiling water if need be.
- Chop the lobster in half through the middle lengthways.
- Take out the meat from the body and the claws. Set aside.
- Heat the cheese sauce with a large handful of finely chopped herbs.
- Stir the meat into the sauce.
- Put back into the shell, top with cheese and cook under a hot grill till bubbling.
- Serve with salad, crusty bread or chips.
