Prep time: 15 minutes + pickling Cooking time: 0 minutes Serves: 2 Skill level: Easy Peasy Recipe by: Seafish

This tempting Hawaiian staple is a healthy and flavoursome option. We know that traditional Poke bowls use raw fish (and of course we have a recipe for that), however if raw fish ain't your thing, you can use tinned.

The method

  1. Place the carrots in a jar. Whisk together the sugar, ginger paste and vinegar and add to the jar. Shake and refrigerate for 1 hour to quickly pickle the carrots.
  2. Flake the tuna into 3cm chunks and mix with the soy sauce, sesame oil and shallots and stir to combine.
  3. Divide the rice between 2 bowls. Scoop the tuna on top and serve with the carrots, spring onions, radishes and avocado, sprinkled with the sesame seeds.
