- Heat the oven to 200c/fan 180c/Gas mark 6, tip the sweet potato wedges onto a large baking tray and toss with the oil, ensuring they lay flat. Bake for 35-40 minutes until the wedges are tender and crispy at the edges.
- Mix together the mayonnaise, shallot, cheese, tuna and cayenne pepper.
- Once the wedges are ready, tip them into a large heatproof serving dish and pour over the tuna mixture. Pop back in the oven until bubbling. and the cheese has melted.
