- Get two lunchboxes or serving dishes and add the mixed leaves, then the cucumber, tomatoes, pepper, radishes and onion.
- Put the beans in a small bowl. Toss with a little lemon juice and the olive oil, and season with salt and pepper. Set aside.
- Add the tuna to the salad, beans and capers to the salad. Finish with the pesto and top with basil leaves, if using.
- Add lemon wedges and season, if desired. You can stir the pesto through everything and eat straightaway, or keep till later.
