Three Dressings for Fruit de Mer

This delightful French classic let you try out different kinds of shellfish and dressings all in one go


The method

Fruit de mer / shellfish platters usually contain cooked lobster, crab, prawns, live oysters, clam and mussel meat. Some local fish mongers have individual, ready-to-eat fruit de mer boxes for sale. These smaller portions would be perfect for this home recipe. 

Red wine and shallot dressing:

Finely chop 1 shallot and mix with 5 tablespoons red wine vinegar. 

Bloody Mary dressing:

Mix 1 teaspoon tomato puree, 1 teaspoon creamed horseradish, 1 tablespoon vodka in a small whisky glass.

Soy and sesame dressing:

Pour 1 tablespoon soy sauce in a small bowl, add a splash of sesame oil. Finely chop 1 spring onion and sprinkle it in the sauce together with some sesame seeds.
