- Drain the oil from the sardines and put 3tbsp in a wok or non-sick frying pan. Heat the oil over a high heat. Add the carrot and cook for 1 minute. Add the pepper and fry for another minute. Toss in the spring onions and cabbage and cook for 1 minute, followed by the beansprouts. Stir fry for about 5 minutes, keeping the mixture moving.
- Add the noodles, sardines and fish sauce to the pan and heat through. Serve immediately.
This can make a great dinner if you need to avoid gluten but remember to check the ingredients list for the rice noodles as some brands may not be suitable for gluten-free diets.
