Shake up your midweek meals with Tesco's marvellous mussels recipe.
For the rarebits: melt the butter in a pan. Add the leek and cook until softened. Stir in the flour, cook for 2 minutes, then stir in 125ml of the beer, the cheese and the mustard. Season with a little black pepper.
For the mussels: melt the butter in a large, lidded pan. Add the shallots and fry for 5 minutes, or until golden. Add the garlic and the remaining beer from the rarebits. Leave to bubble for 2-3 minutes.
Clean the mussels thoroughly and make sure all the shells are tightly closed and without any gaps or cracks. Discards any with shells that are damaged or open. Tip the mussels into the pan with the beer, then cover and steam for 4-5 minutes, until opened (discard any that remain closed). Transfer the mussels to a serving bowl, leaving the liquor behind in the pan. Whisk the cream, parsley and mustard into the mussel liquor, and season. Pour the sauce over the mussels.
Meanwhile, finish off the rarebits. Preheat the grill to high. Lightly toast one side of the bread under the grill, watching it closely so it doesn’t burn. Remove from the grill and top the untoasted side with the rarebit mixture. Return to the grill until the topping is melted and golden.
