This Spanish style stew with squid and chorizo is filled with delicious flavours
Heat the oil in a large saucepan then add the chorizo and fry for 3-4 minutes until the chorizo releases its oil. Add the onion, red pepper and garlic cloves and fry for around 5 minutes, until they soften. Add the paprika and cook out for a further 4-5 minutes.
Add the tomatoes, stock and sweet potato and bring to a gentle simmer for 15 minutes. Then add and squid and continue to simmer gently for 10-15 minutes until the squid is tender.
Season to taste and serve the stew garnished with chopped parsley.
