Tin of BBQ mackerel fillets + tasty bread + slaw = lunch done

Mackerel Open Sandwich

The method

  1. Remove mackerel and sauce from tin and place in a bowl.  Heat in the microwave for 1 minute 50 seconds (800 watt). 
  2. Slice the cornbread into thick slices and toast in the toaster or under the grill. 
  3. Spread coleslaw onto toasted slices of cornbread. If you don’t have coleslaw, you may want to use butter. 
  4. Remove the mackerel from the microwave, break it up with a fork and add it on top of the coleslaw.
