- Melt the butter in a large saucepan. Add the spring onions, diced potato and garlic. Stir over a low heat for 7-8 minutes or until the potatoes are beginning to stick to the pan.
- Stir in the flour and blend in the milk. Bring to the boil and simmer for 7-8 minutes or until the potato is soft.
- Stir in the smoked mackerel and coley and cook over a low heat until the fish is cooked.
- To serve, check the seasoning and add the chopped parsley.
