The method

  1. Measure 60ml of warm water into a bowl, add the sugar and yeast and stir to dissolve.
  2. Stand for at least 5 minutes to ‘proof’ (until froth forms on top).
  3. Sift the white flour, wheat flour, corn meal and salt into a bowl.
  4. Make a depression in the middle of the flour and add 3 tablespoons of the olive oil and 60ml warm water.
  5. Add the yeast mixture and mix all ingredients with your hands. Gather the dough and place it on a pre-floured board.
  6. Knead the dough for 10 minutes to form a smooth, elastic ball, adding more flour if the dough is too sticky.
  7. Grease a large bowl with olive oil and add the dough turning it to coat the top.
  8. Cover and let it rise in a warm place until doubled in size (approximately 45 minutes).
  9. Make the sauce by melting the butter in a pan.
  10. Add the garlic and sweat for one minute on a medium heat.
  11. Add the tomatoes and cook for 2 minutes stirring constantly to avoid the sauce burning and turning bitter.
  12. Add the cream, basil and oregano and bring to a boil.
  13. Once the dough has risen, divide into 6 equal pieces.
  14. On a floured surface roll out the dough into a round shape about 1.5cm thick.
  15. Coat both sides of the shaped crust with olive oil.
  16. Place directly on a hot clean grill until the upper surface begins to bubble (about 2 minutes).
  17. Watch the crust closely and rotate with tongs if necessary.
  18. Remove the crust and turn cooked side up (it should be golden brown).
  19. Brush with olive oil, sauce, cheese and the fish toppings.
  20. Sprinkle some olive oil over each pizza.
  21. Return for final cooking (2 to 4 minutes) rotating for even cooking until the crust is brown and the cheese is hot and bubbly.
