Using ‘ready to eat’ seafood in this summer salad makes it a doddle to make!

Seafood Salad

The method

  1. Cook the quinoa according to the pack instructions. Drain and set aside.
  2. Arrange the watercress on a serving platter.
  3. Combine the quinoa with the tomatoes, spring onions, avocado and peppers. Spoon over the watercress and top with the seafood.
  4. Squeeze over the lemon juice and serve.
