This a really elegant looking dish, which isn’t complicated to put together
The method
Cook the peas according to the pack instructions. Drain then stir in the cream. Heat gently, keep warm and set aside.
Heat 1tbsp of the oil in a frying pan. Add the potatoes and cook for 1-2 minutes on each side. Remove from the pan, keep warm and set aside.
Heat the remaining oil in the frying pan, then add the sea bass, skin side down, for 2 minutes. As the fish curls up hold the ends down gently so the fillet is flat against the frying pan. Flip over and cook for 2 minutes on the other side.
Heat the pancetta, sundried tomatoes and capers in a non-stick frying pan over a medium heat. Stir in the croutons.
Serve the sea bass on top of the pea mash, topped with the tomato mix, with the potatoes on the side.
