A quick and easy sandwich filling that will give you a great Omega-3 boost
Preheat a griddle pan over a medium-high heat until smoking slightly.
Brush the sardines with a little oil and cook, flesh-side down, for 1-2 minutes, before turning over and cooking for another minute. Remove to a plate to cool. Once cool enough to handle, remove the skin and flake the flesh.
Meanwhile, beat the butter with the cayenne pepper, until it is light and fluffy. Season to taste with salt and pepper. Mix in the lemon juice followed by the soft cheese.
Add the flaked fish and mix well.
Serve with the toasted soda bread and lemon wedges.
