  • Salmon Parcels
    1. Preheat the oven to 200˚C/fan 180°C/gas mark 6. Cut two large tin foil squares (they need to be big enough to hold the salmon fillets and be folded over.)
    2. Place the salmon in the centre of the foil and drizzle over with oil. Top with the chilli, garlic, lemon and rosemary (or other herbs) and a grind of black pepper. Wrap the foil around the fish to form a secure parcel and place on a baking tray. Bake in the oven for approximately 15 minutes until the salmon is cooked through.
    3. Serve in the foil or transfer to a serving plate with the juices poured over.

    Tip: This is delicious served with new potatoes boiled in their skins or a jacket potato.

    • 2 chillies, thinly sliced
    • 2 cloves garlic, sliced
    • 2 slices lemon
    • 2 sprigs rosemary (or a herb of your choice)
