Salad Nicoise

A lovely dish that will remind you of summer

The method

  1. Boil the eggs for 6-8 minutes depending on how hard boiled you like them.
  2. Cool under running water.
  3. Cook the beans in boiling water for a couple of minutes.
  4. Drain the tuna and anchovy fillets.
  5. Chop tomatoes, pitted black olives and red onion.
  6. Combine everything together with the capers. Dress with vinaigrette, season to taste and serve.
