- Preheat the barbecue or grill.
- Brush the sardines with a little olive oil and slash the sides of each sardine a fw times. Cook on the barbecue or under the grill for 10 minutes, turning once.
- Meanwhile, make the salsa by combining the peppers, tomatoes, onion, sweetcorn, herbs and chilli in a bowl. Add the 1tbsp oil, lemon juice and some seasoning. Adjust to taste.
- Serve the sardines on the salad leaves with the salsa drizzled over, garnished with the cherry tomatoes.
