Red Cabbage Slaw

The method

  1. Put the shallot into a bowl and sprinkle with salt, leave to stand for 10 minutes and then add the red wine vinegar. Leave to stand for a further 15 minutes.
  2. In the meantime toss the cabbage and carrot together. Put the soured cream, Worcestershire sauce and pickled shallot into a bowl, season with black pepper and toss into the red cabbage to serve.
