Try this seafood twist on our favourite Mexican dish.
Heat the oil in a large frying pan, add the onion and peppers and cook for a couple of minutes until they begin to soften.
Add the fajita seasoning and prawns to the pan. Stir well to ensure that everything is coated evenly in the seasoning and cook for a few more minutes until the prawns have turned pink and are cooked through. Squeeze over the lime juice.
While the prawns are cooking, heat the tortillas according to packet instructions.
Serve the prawns with the warmed tortillas, soured cream, salsa, guacamole and jalapeños (if using), with a grind of black pepper.
