The method

  1. Drain the mackerel fillets, reserving 3tbsp of the oil. Put the oil into a non-stick frying pan. Heat over a medium heat then add the onion and peppers. Cook gently for around 10 minutes until the veg are slightly softened and brown.
  2. Break the mackerel into large chunks, add to the pan and heat through. 
  3.  Transfer the mackerel and vegetable mixture to a warmed serving dish. Serve with the wraps, crème fraiche and lettuce, letting everyone tuck in to make their own fajitas.
