- Drain the mackerel fillets, reserving 3tbsp of the oil. Put the oil into a non-stick frying pan. Heat over a medium heat then add the onion and peppers. Cook gently for around 10 minutes until the veg are slightly softened and brown.
- Break the mackerel into large chunks, add to the pan and heat through.
- Transfer the mackerel and vegetable mixture to a warmed serving dish. Serve with the wraps, crème fraiche and lettuce, letting everyone tuck in to make their own fajitas.
