Mussel Linguine in Tomato Sauce

Not only does this dish look impressive, but it tastes it too.

The method

  1. Heat the oil in a non-stick pan over a medium heat. Add the onion and fry for 6 to 8 minutes, until softened.
  2. Add the garlic and chilli and fry for 1 minute, stirring.
  3. Add the tomatoes, bring to the boil and then simmer for 5 minutes.
  4. While the sauce is simmering, cook the linguine in boiling water according to the pack instructions.
  5. When there are 3 minutes of the cooking time remaining, take a ladleful of the pasta's cooking water and add to the tomato sauce.
  6. Bring the sauce to the boil, add the mussels and cook for 5 minutes.
  7. Drain the linguine and toss into the sauce, over the heat, until the pasta is evenly covered. Garnish with the parsley and serve immediately.


If you prefer, use 350g mussels in their shells. Clean them thoroughly and make sure all the shells are tightly closed and without any gaps or cracks. Discards any with shells that are damaged or open before cooking. Add them at point 6 of the recipe. Discard any that do not open after cooking.
