- Combine all the butter ingredients in a bowl, then roll in greaseproof paper to the size of a large sausage and chill for at least one hour.
- Heat the grill to high
- Lay thre sardines on an oiled tray and brush each sardine with more olive oil season and grill for 10 minutes turning after 5 minutes.
- Place the sardines on to a warm serving dish then top with slices of herb butter leave to melt for a minute under the grill.
- Serve with rice and a rocket salad
