Lemon Sole, Green Beans and Potatoes

A lovely satisfying meal that's simple to make and looks great on the plate


The method

  1. Boil the new potatoes for 15 minutes or until soft, adding the green beans for the last 4 minutes of the cooking time.

  2. Preheat the grill and toast the almonds until they begin to darken. Remove from the grill, roughly chop and set aside.

  3. Place the flour on a plate. Add the fish and coat lightly in the flour, shaking off any excess.

  4. Heat the butter in a non-stick frying pan over a medium heat. Add the fish to the pan and fry until the fish is cooked through and golden brown. Remove from the pan and wrap in tin foil to keep it warm.

  5. Add the cooked green beans and almonds to the pan and heat through for a few minutes.

  6. Serve the fish topped with the green beans, almonds and any buttery pan juices, with the new potatoes on the side.
