The method

  1. De-vein the prawns and place in a bowl.
  2. Mix the ingredients for the marinade together, ensuring that the sugar has dissolved and massage into the prawns.
  3. Heat a little oil in a large frying pan or wok, lift the prawns from the marinade and fry over a medium heat until the prawns have turned pink and are cooked through – no longer translucent. Add the remaining marinade and bring to the boil and toss together with the coriander and rocket leaves.
  4. Pile into a serving dish and hand the lime wedges separately.
