A classic comfort food that’s both easy to make and delicious.
Preheat the oven to the temperature recommended on the packaging for the oven chips. Pour the oil into a deep-sided pan (making sure it's only half-full) or a deep fat fryer. Heat the oil to 180°C or until a cube of bread browns in 20 seconds.
Cook the chips according to the pack instructions.
Mix the flour and cornflour thoroughly, then whisk in the iced sparkling water.
Straight away, dip the fish fillets into the batter and lower them into the hot oil. Cook for 6-8 minutes until crisp and golden.
Blot them on kitchen paper and keep warm in the oven for a minute or two, so that the batter stays crispy.
Serve the fish with the chips, pickled onions, tartare sauce, ketchup and lemon wedges.
