- Make the sauce: put all the ingredients except the oil together in a food processor. Whiz to form a paste. With the motor running, drizzle in the oil in a thin stream and season to taste. Add a little more of any of the ingredients to obtain your preferred flavour. Transfer to a serving bowl.
- Arrange the prawns on top of the Romesco sauce and serve garnished with parsley sprigs and with the lemon wedges on the side.
