Fresh and herb-filled salsa verde is a great complement to fish
In a food processor whiz up all of the ingredients for the salsa verde until they form a thick green sauce, season with salt and lemon juice to taste.
Heat a tbsp of oil in a frying pan and place the sea bass skin side down. Leave for 3-4 minutes on the first side, don’t be tempted to turn it over. Flip the fish over once the skin is golden brown and crispy and cook on the other side for just 1 minute.
Ideally served with some new potatoes and stir-fried greens with a large spoonful of the salsa verde on the side.
