Cod with Pesto and Parmesan Crust

This tasty and quick dish is a full of flavour meal

The method

  1. Heat the oven to 180°C/160°C fan/gas mark 4. Lightly oil a piece of foil or baking parchment and place in a baking dish, oiled side up.
  2. Put the cod in the foil, season with black pepper and spoon over the fresh pesto. Top with the grated parmesan. Wrap up the parcel and cook for 10 minutes.
  3. Unwrap the parcel and cook for another 5 minutes for the cheese to brown.
  4. Serve with seasonal vegetables with the cooking juices poured over.
