- Heat the oven to 180°C/160°C fan/gas mark 4. Lightly oil a piece of foil or baking parchment and place in a baking dish, oiled side up.
- Put the cod in the foil, season with black pepper and spoon over the fresh pesto. Top with the grated parmesan. Wrap up the parcel and cook for 10 minutes.
- Unwrap the parcel and cook for another 5 minutes for the cheese to brown.
- Serve with seasonal vegetables with the cooking juices poured over.
