A deceptively simple meal for 4, with tons of lovely flavours.. the cod stays nice and moist cooked inside salmon and Parma ham
Preheat the oven to 180ºC/fan 160ºC/gas mark 4.
Place the sweet potatoes in a pan of salted water and boil until tender, around 15 minutes. Drain and allow to steam dry for 1 minute. Return the potatoes to the pan and mash them with the butter, a good pinch of salt and pepper, and the chopped parsley.
While the sweet potatoes are cooking, lay the Parma ham slices on a work surface or chopping board. Top each with the cod. Wrap the Parma ham around the fish so it’s completely enclosed.
Heat the oil in a non-stick frying pan and add the cod. Sear on all sides, then place in the oven for approximately 5 minutes, until it’s cooked all the way through.
Serve the cod with the sweet potato mash and green vegetables.
