- Heat the oil in a wok or large frying pan over a high heat until very hot and slightly smoking.
- Add the ginger, garlic and spring onions, stir fry for 20 seconds. Reduce the heat to medium and add the prawns and cook for about 1 minute.
- Stir in the remaining ingredients and continue to stir-fry for 2 – 3 minutes until the prawns are cooked, they will be completely opaque and pink.
- Season to taste with salt and pepper.
- Serve immediately with steamed rice.
