Chilli Szechuan Prawns

The method

  1. Heat the oil in a wok or large frying pan over a high heat until very hot and slightly smoking. 
  2. Add the ginger, garlic and spring onions, stir fry for 20 seconds. Reduce the heat to medium and add the prawns and cook for about 1 minute.
  3. Stir in the remaining ingredients and continue to stir-fry for 2 – 3 minutes until the prawns are cooked, they will be completely opaque and pink. 
  4. Season to taste with salt and pepper. 
  5. Serve immediately with steamed rice.
