A tasty way to enjoy a fantastic fish that the whole family is sure to enjoy
Preheat the oven to 220ºC/fan 200C/gas mark 7. Brush a baking tray with oil.
Season the pollock with pepper on both sides and lay skin-side down on the prepared tray.
Mix the breadcrumbs, cheese, parsley and garlic in a bowl. Add the olive oil and mix well with a fork. Divide the mixture between the pollock fillets and press on top of each piece in a thick, even layer. Bake for 10-15 minutes or until the crust is crisp and lightly golden and the fish is cooked through.
Serve immediately with the broccoli and lemon wedges.
