Put the clams, cockles and mussels into a large enough saucepan with water, putting the lids on and cooking over a medium heat until the shellfish have opened (roughly 5 mins). Discard any that have not opened.
Place the langoustine in cold well-salted water, bring to the boil and boil for 3-4 minutes.
Shuck the oysters, leaving them in the shell. Alternatively, your fishmonger will be happy to do this for you.
Make the vinegar dressing by combing the vinegar and shallots.
Arrange the shellfish on a platter to serve, along with pots of the vinegar dressing, mayonnaise, lemon wedges and sliced crusty bread.
