These barbecued prawns are great when only the zest will do
Whisk the oil, garlic, lemon zest and juice, and rosemary together and season with salt and pepper.
Place the prawns in a non-metallic bowl. Set aside a spoonful of the marinade and keep refrigerated. Thoroughly cover the prawns with the remaining marinade. Cover and leave in the fridge to marinate for around 30 minutes or until you're ready to cook.
Preheat the barbecue or grill.
Thread the prawns onto the soaked skewers. Barbecue or pop under the grill for about 3 minutes on each side, until the prawns have completely changed colour.
Drizzle on some more of the fresh marinade (NOT from the bowl you had the raw prawns in!), shake over a little paprika and serve.
