BBQ Orkney King scallops, raw beetroot and apple

This mouthwatering dish is perfect when you want to impress and don't have much time!


The method

Recipe provided by The Horseshoe Restaurant with Rooms 


  1. Peel and grate the beetroot
  2. Peel and chop half the apple and the dill, add to the beetroot
  3. Season with lemon juice, oil, salt and black pepper
  4. Grill the scallops for about thirty seconds either side depending on size
  5. Season with salt and lemon juice
  6. Place the scallops on top of the salad
  7. Top with fine sticks of apple
