- Preheat the oven to 200˚C/fan 180°C/gas mark 6. Cut two large tin foil squares (they need to be big enough to hold the salmon fillets and be folded over.)
- Place the salmon in the centre of the foil and drizzle over with oil. Top with the chilli, garlic, lemon and rosemary (or other herbs) and a grind of black pepper. Wrap the foil around the fish to form a secure parcel and place on a baking tray. Bake in the oven for approximately 15 minutes until the salmon is cooked through.
- Serve in the foil or transfer to a serving plate with the juices poured over.
Tip: This is delicious served with new potatoes boiled in their skins or a jacket potato.
