Preparing seafood

Most of the time we buy fish pre-prepared at the supermarket or the fishmonger’s – but if you fancy cooking seafood from scratch, you’ll need to know how to prepare your fish first.

Unfortunately, there isn't one universal method for fish preparation; different species of fish have different body shapes, and so filleting methods vary by species. The BBC has produced a useful guide to filleting round fish, which includes haddock, mackerel and trout.

Below are a selection of videos on a range of fish preparation techniques, including filleting, skinning and steaking.
