Contrary to popular belief, fish doesn’t need to take long to prepare. Tinned fish, prawns, fillets of frozen fish and ready-prepared fillets (which often come with a sauce) need minimal preparation, if any at all! This makes these dishes an ideal choice for today’s busy lifestyles. Plus, there are plenty of speedy ways to cook fish such as steaming, grilling, baking, poaching, roasting or microwaving so that you can get a meal on the table from start to finish in as little as 20 minutes. Look for pre-prepared, ready-to-cook packs of fish such as seabass or haddock in the supermarket. They’ll give you all the instructions you need to cook them. Keep canned fish such as tuna, salmon, pilchards, mackerel and sardines in your cupboard, too – they make great sandwich fillings and toppings for jacket potatoes. Mix prawns with lemon juice and reduced-fat mayo and use as a sandwich filling or a topping for jacket potatoes. Top a ready-made pizza base with tomato sauce, favourite veg, mozzarella, then prawns, smoked mackerel and a few canned anchovies. Choose sushi for an on-the-run lunch or snack. Add your favourite fish to a stir fry and serve with microwaveable brown rice. Serve canned or fresh tuna, smoked mackerel, prawns, crabmeat, canned salmon or grilled fish fillets with new potatoes and salad. Make prawn or salmon fajitas and serve in wraps with guacamole, salsa and reduced-fat sour cream or fromage frais. The list of quick and easy meals is endless.
