Foodie Fish Recipes for Seafood Week

To celebrate Seafood Week we asked a few of our favourite food bloggers to come up with recipes using prawns, tuna or cod using 5 ingredients or less. Here are their recipes as well as some of our favourites from recipes you submitted.

Simple and Healthy Prawn Recipes

Garlic Butter Prawn Tagliatelle

Ingredients

  • 300g dried Tagliatelle
  • 50g butter
  • 2 cloves of garlic
  • 150g fresh prawns
  • 100g fresh baby spinach

Instructions

  • Cook the Tagliatelle in a pan of boiling water
  • In a frying pan melt the butter and grate in the garlic cloves.
  • Add the prawns in and cook for a couple of minutes (if the prawns are already cooked just warm them through and if they are raw cook for a little longer until they have turned pink).
  • In the last minute of cooking the Tagliatelle, add the spinach and cook just until it has wilted.
  • Drain the Tagliatelle and spinach and mix with garlic butter prawns.
  • Serve

  • Spanish Omelette with Prawns
    Ingredients: butter, 2 eggs, 100g cooked prawns, 1/4 red pepper, handful of spinach
    • Melt the butter in an omelette pan and add red pepper and cook until softened.
    • Add the spinach and cook until wilted
    • Turn up the heat and add the lightly beaten eggs
    • When the omelette has set enough to flip add the cooked prawns and fold the omelette over in the pan encasing the filling
    • Serve with a salad (Anna)
  • Fish Pie with Prawns
    Ingredients: some cod loin, prawns, packet of white sauce, parsley and potatoes.
    • Cook the fish and prawns and then using a fork separate in chunks.
    • Cook the white sauce and add a generous amount of fresh Parsley. (Can season with salt and pepper too if wanted)
    • Add the fish and prawns to a small lasagne style dish and top with either the potato cooked and mashed, or you can do it as a thin sliced potatoes on top.
    • Cook in the oven (180 degrees) for 25 mins or until the potato has started to go golden. (Lynn)
  • Prawns threaded on a skewer
    Prawns threaded with grape tomatoes, zucchini chunks and onion wedges and then grilled or pan sauteed in olive oil. (Janet)
  • Fiery and Delicious Prawns
    Ingredients: 2tbsp oil, 250g Prawns, 4 tbsp vindaloo curry paste, 2 tins (14 oz) tomatoes, 4 green chillies
    • Just cook the paste for a few minutes
    • Add the chillies and the tomatoes and cook for 10 minutes
    • Finally add the prawns, cook for a further 10 minutes (Jo)
  • Lemony prawn bruschettas
    A quick and healthy lunch - all you need to top your bruschettas is prawns, lemon, garlic, olive oil, crushed garlic cloves and/or red chilli, deseeded and sliced and serve with salad leaves! (Tracy)

Nutritious Tuna Salad

Ingredients

  • 1 tin of tuna
  • tomatoes
  • mixed salad leaves
  • beetroot
  • half a tin of Butter beans

Instructions

  • Fill a big bowl with mixed salad leaves
  • Add in a tin of tuna.
  • Add half a tin of butter beans
  • Chop the tomatoes and beetroot and add them into the bowl
  • Toss the salad and garnish. I use, olives, salt, chilli flakes and olive oil.

  • Quick & Easy Tuna Fishcakes
    Ingredients: leftover mashed potatoes, a tin of tuna, lemon juice, chopped spring onions and breadcrumbs.
    • Just mix all the ingredients together in a bowl, then shape into small balls, flatten and dip each side in the breadcrumbs.
    • Fry for about 10 mins, turning halfway through cooking or cook in a medium oven for about 15 mins, or until crisp and golden. (Ellie)
  • Tuna Roll up
    Ingredients: a tin of tuna, salsa, onions, tortillas, and cream cheese.
    • Mix tuna, salsa and onions.
    • Spread cream cheese on tortilla.
    • Top with tuna mix.

  • Tuna and Pesto Pasta
    Ingredients: Pasta, pesto, pine nuts, grilled asparagus and a good chunk of grilled tuna.

  • Cheat's Paella
    Tuna, roasted red peppers, rice, peas and saffron. (Melanie)
  • Tuna Pitta Breads
    Ingredients: a tin of tuna, cucumber, tomatoes, onions and pitta bread
    • Pop a drained tin of tuna into a medium bowl.
    • On a chopping board chop up into tiny cubes cucumber, tomato, onions in equal quantities.
    • Mix the salad together with fresh lemon, salt and pepper.
    • Add to the tuna and toss together.

Tasty and Healthy Cod Recipes

Pan Fried Cod on a Bed of New Potatoes

Ingredients

  • cod fillet
  • new potatoes
  • plum tomatoes
  • onions
  • parsley


Instructions

  • Boil the new potatoes
  • Fry plum tomatoes and onions with a little garlic and ginger
  • Pan fry the cod fillet with salt and pepper until the skin is nice and crispy
  • Add the pan fried cod and onion tomato mix to the bed of new potatoes
  • Garnish with parsley.

  • Cod in Tomato and Thyme (Her daughters favourite)
    Ingredients: 1 onion, 400g can chopped tomato, few sprigs of thyme, 1 tbsp soy sauce, 4 cod fillets
    • Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned.
    • Stir in the tomatoes, sugar, thyme and soy, then bring to the boil
    • Simmer 5 mins, then slip the cod into the sauce
    • Cover and gently cook for 8-10 mins until the cod flakes easily

  • Oven Baked Cod
    • Cod baked in the oven with capers, olives, parsley, a couple of anchovies and a squeeze of lemon juice. (Maxine)
  • Petso Cod Bake
    • Bake cod with homemade pesto, yoghurt and dill. Great served with homemade wedges and salad. (C)
  • Healthy Fish Fingers
    • Cover the cod in light mayo and then crushed up rice crispies. It makes a light batter to roast it like a healthier home-made fish finger! (Liam)

    • Cod topped with chorizo/breadcrumb/lime crumb and baked with new potatoes and in season veg. (Emma)
