Cuttlefish

Very similar to squid, but can be tougher, and not readily available since most landed in the UK are exported to France and Spain. Usually available in sizes from 225-500g.

Cuttlefish has a delicate flavour and is affordable and easy to cook, working particularly well in braised dishes. The cuttlefish is of course also famous for its hard white bone (often seen in bird cages!)
