- Boil-in-the-bag seafood with parsley or mushroom sauce makes a tasty filling for a jacket potato. Add grated cheese for an extra flavour boost.
- Max your tuna mayo – mix together mashed-up smoked mackerel, sweetcorn, some chopped coriander and a liberal dollop of mango chutney. It’s a winner for baked potatoes and sandwich fillings.
- Buy supermarket own-label smoked salmon off-cuts and mix them with crème fraîche, some chopped chives and a good grainy mustard for another great baked potato filling.
