Baked potatoes

  • Boil-in-the-bag seafood with parsley or mushroom sauce makes a tasty filling for a jacket potato. Add grated cheese for an extra flavour boost.
  • Max your tuna mayo – mix together mashed-up smoked mackerel, sweetcorn, some chopped coriander and a liberal dollop of mango chutney. It’s a winner for baked potatoes and sandwich fillings.
  • Buy supermarket own-label smoked salmon off-cuts and mix them with crème fraîche, some chopped chives and a good grainy mustard for another great baked potato filling.

Spreads and pâtés

  • Perk up your toast and oatcakes with some quick mackerel pâté: just mix some mashed-up smoked mackerel with a blob of crème fraîche, a dash of lemon juice and seasoning.
